Sand Race Track Teacher: (must be 23 or older for those are tricky tracks)

steeple chase teacher: (must be 24 at least dangerous event)

breeder class instructor: (must know horse genetics well yourself like what colors horses could carry and how to figure out what color they could be)(character must be 23 or older)

Stable manager: (open must be 25 or older)

Lead stable hand: (must be 19 or older)(there could possibly be 2 one female one male)

Stable hands: (must be students of 15 or older and can also just be thinking about or working in extange for boarding (if breeding or something like that)

Grooms: (just to help out when theirs shows or some student pay them to groom their horses)(must be 16 or older)
